Parma Pantry Challenge: Eggplant Parmigiano
Thursday, January 20, 2011 at 3:43AM I wish I could take credit for this beautiful creation, but all I did was eat it. Emily found the recipe which used:
- The remains of the giant can of tomato paste, purchased on the mistaken belief that it was a can of tomatoes in their whole rather than paste form;
- Some of the large quantity of breadcrumbs we seem to have accumulated;
- Some Parmigiano Reggiano cheese (although we'll probably buy some more as we have both developed a PR habit since moving here).

Best of all, due probably to the very generous application of tomato sauce, Emily's looked considerably tastier than the version in the recipe, so she gets bonus food styling points to add to her food-usage score.

I will pre-empt any Italian readers who will, no doubt, point out that this is not a classic Eggplant Parmigiano. However Albi, an Italian, dropped by the apartment during this dish's construction and he was so impressed by its beauty and potential tastiness, he paid Emily the highest compliment an Italian man can give a woman:
"Emily, you will make a great Mama!"
